Curried Chickpea - Egg Salad

Salad veggies including broccoli

A tasty alternative to statins ...

Ingredients:

  • 1 tin chickpeas
  • 1 Tbs. extra virgin olive oil
  • 1 Tbs. mild curry powder
  • 1 clove garlic
  • ½ head of broccoli, cut into flowerettes
  • 4 Tbs. chives, chopped
  • 1 red pepper, finely chopped
  • 2 eggs, hardboiled and cut into wedges
  • Mixed green salad and Ryvita to serve

Pour oil in a saucer, add garlic and curry powder and heat gently just until it starts sizzling. Turn the heat off, add chickpeas, pepper and chives, season to taste and mix well. Serve on green salad, topped with egg wedges. You may also add a handful of broccoli-alfalfa sprouts and/or soaked-rinsed seaweed such as Arame.

Beetroot and Sesame Salad

Beetroot

Can be served cold or warm...

Ingredients:

  • 4 fresh organic beetroots, scrubbed and grated with the peel left on
  • 4 tbsp sesame seeds
  • Drizzle of organic cold pressed sesame oil
  • Juice of 1 lemon
  • Large handful of coriander green or parsley, roughly chopped

Mix all ingredients in a bowl, and serve immediately.

Salad

Supporting natural fertility ...

Ingredients:

  • 2 large handful of Mixed leaves (spinach, beetroot, rocket)
  • 10 broccoli flowerettes
  • large handful of fresh parsley, roughly chopped
  • 1 carrot, grated
  • 1 small beetroot scrubbed and grated
  • 2 eggs, hardboiled and wedged
  • 2 Tbs. hemp seed oil
  • Juice and grated zest of ½ a lemon
  • 2 heaped tbsp sunflower seeds
Tummy

Mix all salad ingredients, sprinkle top with sunflower seeds and enjoy with 2 oat cakes. You may sprinkle your salad with 1 tbsp Green Nori seaweed for extra nutrient boost!

Seaweed Salad

Great thyroid and bone support in one dish!

Ingredients:

  • 1 Tbsp dried Arame or Hijiki
  • 2 carrots scrubbed
  • 2 Jerusalem artichokes, peeled
  • ½ tin of chickpeas, thoroughly rinsed
  • Large handful of fresh parsley, chopped
  • 1 Tbsp. sesame oil
  • Juice of ½ lemon
  • Himalayan salt & freshly cracked pepper

Soak seaweed in hot water for 10 minutes.

Grate the carrots and Jerusalem artichokes.

Discard soaking water from the seaweed (you may water your plants with it) and rinse with cold water.

Mix all ingredients, season to taste and enjoy with rye crackers.

Digestive Booster Salad

You are what you absorb!

Ingredients:

  • 4 large handfuls of Rocket leaves
  • 1 large beetroot – raw, grated coarsely
  • 2 slices of fresh pineapples with its hard core – cubed
  • 2 tbsp Flax seed oil
  • Juice of ½ a lemon
  • 4 tbsp pumpkin seeds

Combine ingredients and serve as a starter. Chew thoroughly!
